How you coat or marinate your snacks is very important in terms of oil absorption. By breading or coating sandwiches with breadcrumbs, flour, and other foods like oatmeal, flattened rice can absorb more oil and inflate calories. If you want to reduce oil absorption in fritters or snacks, be sure to cover the snacks with a fine dough of all-purpose flour, rice flour, or cornmeal. Due to their gluten content, they help bind the snacks together and minimize oil absorption. Also, be sure not to add too much flour while coating the snacks, too much flour leads to excessive oil absorption.
